This recipe is so fun to eat! Whether you serve it as a side dish, a snack or an appetizer, these little fritters will have you craving Aloe Organics cauliflower in no time flat! Serve it with ranch, hot sauce or any of your favorite dipping sauces.
- 1 head of Aloe Organics cauliflower
- 2 eggs
- 1 cup of panko breadcrumbs
- salt and pepper to taste
- Preheat the oven to 400 F. Wash the cauliflower and pat dry. Break of the stems into bite size pieces, being careful not to compromise the integrity of the stem and set aside. Crack the eggs into a bowl and beat them until smooth. On a large plate pour the panko breadcrumbs and arrange so that the panko is evenly distributed on the surface of the plate. Add the salt and pepper to the panko mixture. Drop a cauliflower piece into the egg wash and roll it around so that it is thoroughly coated with the egg. Then roll it in the panko mixture taking care to press the panko on with your fingers if needed. Transfer to a sheet pan and repeat until all the pieces are covered. Bake for 20 minutes or until golden brown.
