2Tbps. sesame or canola oil
1 lb. yard-long beans, ends trimmed and cut into 1-inch pieces
1 Tbsp. minced, peeled fresh ginger
1-2 cloves minced garlic
1/4 cup chicken broth
salt and pepper to taste
Basil for garnish
Stir-fry the beans in oil with the garlic and ginger over medium heat. When the garlic is browned but not burned, add the chicken stock. Reduce heat, cover and simmer for 7-10 minutes. Garnish with fresh basil. Serve with chicken or fish.
