Zucchini are the most popular summer squash variety. It has an oblong shape and deep green skin. Serve it raw as a side for dips or in salads or sauté with Thai basil and sea salt for 10 minutes. Roast it for 20 minutes at 350F with olive oil salt and pepper for a nice side dish. Our favorite new trend is to create zoodles or zucchini noodles and serve as a healthy substitute for pasta. Sauté zoodles for 5-10 minutes before tossing with any pasta sauce.
