Radicchio is a leaf chicory with bright red leaves and white veins. It can have a bitter, spicy taste when eaten raw. Once grilled the flavor mellows into a delicious leafy green. Make it into a salad paired with fresh goat cheese and nuts or grill it and drizzle with olive oil. It’s excellent in risottos and pastas or sauteed with honey and balsamic vinegar.
