Kohlrabi is the otherworldly looking purple globe that might become your new favorite vegetable. The most important thing is to thoroughly peel it – the skin is very fibrous. The leaves are good as cooking greens. Grate and add to a salad or coleslaw. Slice and stir-fry. Delicious roasted or a nice addition for a stew. Pair grated kohlrabi with cherry tomatoes, sprinkle with Parmesan cheese, drizzle with a few splashes of balsamic vinegar and enjoy!
