Pac choi is a very versatile brassica, great in raw vegetable salads or cooked – just don’t overcook. The crisp stems have a great texture. One idea: combine thin ribbons of pac choi stems and leaves with stock, shreds of meat, ginger, green onions and tofu for soup.
