Fennel is a white bulb with bright green lacy leaves and a subtle flavor faintly reminiscent of licorice. Store by wrapping in plastic and keeping in the refrigerator. Remove the outer layer prior to using. The outer layer and the leaves are great to add in a stock. Thinly slice the bulb and add to your favorite spaghetti sauce recipe or try sautéing wedges in olive oil over high heat until caramelized. Eat it raw sliced in sticks with olive oil and lemon. Try it in rice, pasta, polenta, seafood dishes and soups.
