Chard is easily identifiable by the vibrant colorful stems that are also edible. Discard the bottom inch or 2. The stems should go in the pan a few minutes before including the leaves. Chard is a quick-cooking leafy green with a subtle flavor. Substitute it for spinach in sauté recipes. We grow rainbow mix and harvest some of it early as baby chard, which is delicious raw in salads.
