If you love granola, you will never eat store bought again! This recipe is incredibly easy and makes your entire house smell amazing. It’s also a great use for honey that has emulsified. This recipe is endlessly adaptable. You can pair it with any nuts, seeds or dried fruit in your pantry and it will always turn out amazing.
4 cups old fashioned rolled oats
1 cup coarsely chopped nuts
1/4 cup sunflower seeds (optional)
1/2 – 1 tsp. cinnamon
1/4 tsp. ground ginger
pinch of nutmeg
1/2 cup honey
8 Tbsp. unsalted butter, melted
1 cup dried fruit
Preheat the oven to 300F. In a large bowl combine the oats, nuts, seeds if using, cinnamon, ginger and nutmeg. In a separate bowl, combine the honey and melted butter. Pour the honey mixture over the oats and toss to combine. Place on a parchment lined or greased baking sheet, spread in a single layer. Bake for 25 minutes. Transfer to a rack to cool. Break up granola and store in an airtight container. Enjoy with yogurt and strawberries or as a topper to smoothie bowls!
